Vegetable Omelet with Feta Cheese
Yield: 1 serving
Ingredients:
- 1/2 cup bell pepper diced
- 1/2 cup onion diced
- 2 eggs
- 2 tablespoons feta cheese
- 1 tablespoon olive oil
- Salt and pepper, to taste
Directions:
- Crack two eggs into a bowl and beat until no more yolk streaks are present
- Heat 1 tablespoon of olive oil in a small pan on medium heat
- Toss bell pepper and onion into pan
- Season with salt and pepper for taste
- Sauté until bell pepper and onion are soft
- Pour beaten eggs into the pan
- Swirl pan so that egg forms uniform layer over bell pepper and onions
- Using a pan lid, cover and steam eggs on medium heat for about 2-3 minutes
- Sprinkle feta cheese over omelet
- Slide out of pan, fold over, and serve
