Inflammatory Bowel Disease which include both Crohn’s disease (CD) and Ulcerative Colitis (UC) are two chronic inflammatory diseases of the gastrointestinal tract. The etiology of IBD is not completely understood, but is viewed as an environmentally initiated, immune mediated, chronic inflammatory disorder of the gastrointestinal tract which develops in genetically susceptible individuals. We have created a special diet to help reduce inflammation and encourage mucosal healing, called the IBD-Anti-inflammatory Diet, or IBD-AID. This diet restricts the intake of gluten-based grains, starches, lactose, and refined sugars as these types of complex carbohydrates are difficult for those with IBD to digest.
