Sautéed Zucchini (or summer squash) with Parmesan
Serves 4
Ingredients:
- 1 tablespoon Olive oil
- 2 pounds zucchini (about 4 medium) or summer squash
- 1/8 teaspoon Salt
- Freshly ground pepper to taste
- ½ cup Parmesan cheese (1 ounce) finely shredded
Directions:
- Slice zucchini into ¼ inch thick slices.
- Heat oil in a large non-stick skillet over medium heat.
- Add zucchini and cook, stirring every 2-3 minutes, until tender and slices are golden brown (25 minutes).
- Reduce heat, sprinkle with salt and pepper.
- Sprinkle with cheese, cover and cook for 2 minutes.
- Cut into wedges and serve warm.
