Apple Chickpea Cake

Ingredients:
- 1 cup dried chickpeas
- 10 fl oz. pure unsweetened apple juice
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon vanilla, all-natural
- 1/4 cup honey
- 1 tablespoon canola oil
Optional additions: 1/4 cup dried cranberries, raisins, or cherries (no sugar added)
Optional toppings: 1/4 cup raw sunflower seeds
Directions:
- Preheat the oven to 375°F. Line a 8x8 pan with parchment paper.
- Soak dried chickpeas in apple juice overnight in a blender. Drain and discard the leftover liquid; keep the drained chickpeas in the blender.
- Add eggs, baking soda, cinnamon, ground cloves, vanilla, honey, and canola oil. Blend everything together until very smooth.
- Stir in the optional dried berries (do not blend).
- Pour into a parchment-paper lined pan. Top with optional sunflower seeds.
- Bake for 35 minutes, until the top is golden brown or until an inserted toothpick comes out clean. Let it cool before removing it from the parchment paper.
