Pineapple-Poached Carrots
2 cups julienned carrots
¾ cup (6 oz) pineapple juice
¾ tsp. cinnamon
1/8 tsp. nutmeg
Freshly ground black pepper, to taste
In medium saucepan, combine all ingredients. Bring mixture to boil, reduce heat, cover pan, and simmer carrots for 10 minutes or until tender-crisp.
