Bean Guacamole

(Makes 4-6 servings) 

1 cup canned white beans (navy, great northern, cannellini) 
1 large ripe avocado 
¼ cup chopped Italian plum tomato 
2 tbs. lemon juice 
2 tbs finely chopped parsley 
hot pepper sauce (optional) 
salt, to taste 

Mix everything together in blender or food processor.

Sodium 13mg (no salt added), 131mg (with 1/4 tsp salt added)
