Cubanelle Peppers
Yields 2 to 4 servings
Ingredients:
- 6 to 8 Cubanelle/Italian peppers, cut into chunks
- 2 tablespoons extra virgin olive oil
- Salt to taste
Directions:
- Preheat oven to broil.
- On a large baking tray, mix together the olive oil and salt (if desired) so that the tray is coated. Rub all the excess oil onto the peppers until they are evenly covered.
- Broil in the oven until they are soft and slightly browned, but not charred, 20 to 30 minutes.
