Arctic Melon Pops
Ingredients:
- 6 ounces frozen orange juice concentrate (no sugar added)
- 1/2 very ripe cantaloupe, cut into bite sizes
- 1 cup plain lowfat or non-fat yogurt
- 1 cup fresh or frozen berries, no sugar added (strawberries, blueberries or raspberries)
- 1 ripe banana, cut up
Directions:
- Place all ingredients in blender and process until smooth. Line up about 15 3 oz. paper cups on tray for placing in freezer.
- Pour mix into cups until 3/4 full. Cover each cup with foil and make a small slit in center of foil with knife. Position popsicle stick upright in slit. Freeze and enjoy a guiltless, refreshing treat with your kids this summer.
