Oat Flour Flaxseed Bread
Prep Time: 5 minutes Bake Time: 50-55 minutes Makes: 1 loaf
Ingredients:
2 ½ cups oat flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon sea salt
2 tablespoons ground flaxseed
¾ cup plain Greek yogurt (or non-dairy, unsweetened yogurt)
½ cup unsweetened non-dairy milk
2 eggs (or 2 flaxseed eggs)
¼ cup applesauce
¼ cup honey, raw local is best
1 cup gluten-free rolled oats (can substitute with steel-cut oats or oat groats)
Directions:
1. Preheat oven to 350F. Lightly grease loaf pan.
2. Make oat flour- add oats to blender and blend for ~20 seconds or until flour forms.
3. Combine dry ingredients. Combine wet ingredients.
4. Add dry ingredients to wet ingredients.
5. Add dough to loaf pan and bake for 50-55 minutes or until toothpick when inserted to the middle of the loaf comes out clean.
