Balsamic-Roasted Onions
Serves about 2-4
Amazing addition to any breakfast, lunch and dinner. The recipe doubles easily, you’ll be glad you made extra.
Ingredients:
- 4 large red onions
- 1-2 tablespoons olive oil
- 1/3 cup balsamic vinegar
- ½ teaspoon sea salt
Directions:
- Preheat oven to 450 degrees.
- Peel onions and cut through the root end into 8 wedges
- Place in 9-by-13-ince baking dish and toss with olive oil
- Pour vinegar over onions and sprinkle with salt
- Cover with foil; bake until almost tender, 45 minutes.
- Uncover and cook until soft and caramelized, 5 to 10 minutes more.
