Apple Chickpea Cake

4 servings

Ingredients:

  • 1 cup dried chickpeas
  • 10 fl oz. pure unsweetened apple juice
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon vanilla, all-natural
  • 1/4 cup honey
  • 1 tablespoon canola oil

Optional additions: 1/4 cup dried cranberries, raisins, or cherries (no sugar added)

Optional toppings: 1/4 cup raw sunflower seeds

Directions:

  1. Preheat the oven to 375°F. Line a 8x8 pan with parchment paper.
  2. Soak dried chickpeas in apple juice overnight in a blender. Drain and discard the leftover liquid; keep the drained chickpeas in the blender. 
  3. Add eggs, baking soda, cinnamon, ground cloves, vanilla, honey, and canola oil. Blend everything together until very smooth.
  4. Stir in the optional dried berries (do not blend).
  5. Pour into a parchment-paper lined pan. Top with optional sunflower seeds.
  6. Bake for 35 minutes, until the top is golden brown or until an inserted toothpick comes out clean. Let it cool before removing it from the parchment paper.
