Flourless Chocolate Protein Muffins

Prep Time: 5 minutes     Bake Time: 20-25 minutes    Makes: 12 muffins

Ingredients:
1 cup natural creamy peanut butter, unsweetened
3 ripe bananas
¼ cup raw honey
¼ cup unsweetened cacao or cocoa powder
¼ cup hemp seeds
3 tablespoons cacao chips*, unsweetened

Directions:
1. Preheat oven to 350°F. Line muffin tin with muffin papers.
2. Combine ingredients (except for cacao nibs) in a food processor and blend until smooth, about 1 minute.
3. Spoon muffin batter into papers. Top with cacao nibs. Bake for 20-25 minutes. Muffins will be gooey (and delicious)!

IBD-AID Phases II and III (as tolerated). For Phase III, can substitute cacao chips with cacao nibs. For Phase 1, muffins should be moist/soft and cacao chips eliminated (as tolerated). Please see IBD-AID Foods List to adapt recipe according to personal tolerance and phase.
