Peanut butter chocolate chip oatmeal cookies
Ingredients:
1 cup whole wheat flour
1 ¼ cups old-fashioned oatmeal
1tsp. baking soda
½ tsp salt
½ cup natural peanut butter
½ cup olive oil
¾ cups brown Sugar
1 tsp. vanilla
½ cup egg substitute (or 2 eggs)
1/2 cup mini semi-sweet chocolate chips (or 1 cup regular size chocolate chips)
1 cup nuts (optional)
Preheat oven to 350 degrees.
Combine flour, oats, baking soda and salt in a small bowl. Beat oil, peanut butter, sugars and vanilla extract in large mixer bowl until creamy. Add eggs or egg substitute, beat well. Gradually beat in flour mixture. Stir in morsels. Drop by founded teaspoon onto ungreased baking sheets.
Bake for 8-10 minutes.
Cool on baking sheets for approximately 2 minutes; remove to wire racks.
Makes 24 cookies
