Diabetic Recipe: Grilled Shrimp and Sausage Skewers
Makes 8 servings
Ingredients
- 1½ lbs large raw shrimp, peeled and deveined
- 1 package of Al Fresco Fully Cooked Chicken Sausage (various flavors to choose from)
- 8 grilling skewers
- ¼ cup butter OR coconut oil, melted
- 1 small hot red chili pepper OR Tablespoon of paste (or preferred seasoning)
- 2 cloves garlic, crushed OR 2 teaspoons garlic paste
- ½ teaspoons each of salt and pepper
Instructions
1. Preheat grill to medium high.
2. Mix the butter, chili pepper/seasoning, garlic, salt and pepper in a bowl and set aside.
3. Cut each sausage into 8 even slices and add 4 slices of sausage and 4 shrimp to each skewer, alternating per the photo.
4. Brush both sides of skewers with the mixture. Grill for 2-3 minutes per side, until shrimp are cooked.
5. Salt and pepper to taste.
