Diabetic Recipe: Baked Chicken Tenders

Ingredients
- 4 skinless, boneless chicken breast halves (1 to 1 ¼ pounds total)
- 2 lightly beaten egg whites
- 1 teaspoon finely shredded lemon peel
- ½ cup seasoned fine dry bread crumbs
- ¼ cup finely shredded parmesan cheese
- ¼ cup low-calorie barbecue sauce (optional)
Instructions
1. Preheat oven to 400 degrees F. Lightly coat a large baking sheet with nonstick cooking spray; set aside. Cut each chicken breast half lengthwise into three strips.
2. In a bowl, beat together egg whites, 1 tablespoon water, and lemon peel. In another bowl, stir together bread crumbs and cheese. Dip chicken in egg mixture, then in crumb mixture, turning to coat. Arrange strips on baking sheet. Lightly coat strips with cooking spray.
3. Bake 15 minutes or until chicken is no longer pink (170 degrees F), turning once halfway through baking. Serve with barbecue sauce if you choose.
